Sandwiched between the no-butter sponges (it’s sunflower oil instead, as well as folded in whisked egg whites) is a sweet and creamy Columbian whole-bean instant coffee flavoured mascarpone filling.
Stenciled icing sugar and cocoa powder provide the decoration.
