Almond, Pistachio and Lemon Tray Bake.

I started with Roger Pizey’s Pistachio and Lemon Cake recipe (World’s Best Cakes), then added some flaked almonds and changed the shape, switching from a round cake tin to an oblong tray bake tin.

The taste and smell is distinctly middle eastern.

I particularly like the colour and texture.
