M’hanncha.
Served in Morocco at family celebrations, this is a scented, nutty filo pastry cake.
Flavoured with ground almonds, chopped pistachios, a little ground cinnamon, zests of an orange and a lemon, and orange blossom water. Dusted with icing sugar, and sprinkled with toasted flaked almonds and pistachios.
The filling is reminiscent of marzipan. Similar in texture, with a more subtle and complex flavour.
