A madeira sponge layer cake, interspersed with strawberry jam, with a mirror glaze finish.
The design stage.
There were a few changes along the way for practical reasons.
A red velvet sponge lost out in favour of a madeira’s preferred ‘precision-cutability’ and ‘shape-holdability’ qualities.
Also a couple of strawberries failed to make the final cake because they wanted to steal the show from the cute hearts on the top. They were ok about it, I just reminded them that sometimes less is more.
