Almond and Pistachio Balmoral Snowflake Cake.

I based the recipe for this cake on a Balmoral Almond Cake as featured in The Dairy Book of Family Bakery, published in 1983.

Serving twelve, the six wings of the snowflake are alternate almond and pistachio flavoured sponges. Each can be identified at the table by the alternate almond and pistachio dressings.

Here’s my working plan, drawn to actual size and used in the cutting and assembling of the sponge sections.
